Egg Fry

Ingredients

  • 3 boiled and peeled eggs
  • 1 medium sized onion
  • 1 medium sized tomato
  • 1 sprig curry leaves
  • ½ tsp mustard seeds
  • ½ tsp red chilli powder
  • ¼ tsp turmeric powder
  • ¼ tsp cumin powder
  • ¼ tsp garam masala
  • 1 tsp coriander powder
  • Coriander leaves
  • Salt to taste
  • ⅓ cup of water
  • 1 tbsp oil

Cooking instructions

  • Boil 3 eggs in water for 10 mins. Peel them and chop them into pieces. Keep it aside.
  • Heat oil in a pan and add mustard seeds. Once the mustard seeds crackle, add chopped onions and curry leaves. Saute till onions turn translucent.
  • Once onions are slightly browned, add chopped tomatoes and saute.
  • Once tomatoes have turned mushy add all the masala powders and salt.
  •  Mix well and saute till the raw smell of masala powders go and add water. Mix well and cook till it forms a paste. 
  • Now add the chopped egg pieces.
  • Carefully mix them such that the egg pieces are coated with the masala. Close and simmer for 2 minutes.
  • Garnish with coriander leaves and serve hot or warm.
