Ingredients
- 3 boiled and peeled eggs
- 1 medium sized onion
- 1 medium sized tomato
- 1 sprig curry leaves
- ½ tsp mustard seeds
- ½ tsp red chilli powder
- ¼ tsp turmeric powder
- ¼ tsp cumin powder
- ¼ tsp garam masala
- 1 tsp coriander powder
- Coriander leaves
- Salt to taste
- ⅓ cup of water
- 1 tbsp oil
Cooking instructions
- Boil 3 eggs in water for 10 mins. Peel them and chop them into pieces. Keep it aside.
- Heat oil in a pan and add mustard seeds. Once the mustard seeds crackle, add chopped onions and curry leaves. Saute till onions turn translucent.
- Once onions are slightly browned, add chopped tomatoes and saute.
- Once tomatoes have turned mushy add all the masala powders and salt.
- Mix well and saute till the raw smell of masala powders go and add water. Mix well and cook till it forms a paste.
- Now add the chopped egg pieces.
- Carefully mix them such that the egg pieces are coated with the masala. Close and simmer for 2 minutes.
- Garnish with coriander leaves and serve hot or warm.
