Bitter gourd Stir-fry

Prep time – 15 mins

Cook time – 30 mins

Ingredients

  • 2 medium sized bitter gourd
  • 1 tbsp rock salt + table salt to taste
  • 1 tbsp oil
  • 1/4 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 sprig curry leaves
  • 1/8 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp coriander powder

Cooking instructions

  • Peel the bitter gourd and chop into fine cubes. Add water in a bowl and add 1 tbsp rock salt. Soak the bitter gourd pieces in salt water for about 15 mins.
  • Heat oil in a pan, preferably non-stick and add mustard seeds. Once the mustard seeds crackle add cumin seeds and curry leaves.
  • Then drain the bitter gourd and add into the pan and saute for 15 minutes on low flame.
  • After 15 minutes you can see that the bitter gourd pieces have shrunk considerably. At this stage add turmeric powder, red chilli powder and coriander powder.
  • Mix well and keep stirring in intervals for 10 more minutes.
  • When you see that the bitter gourd is browned and feel weightless while sauteing switch off the stove.
  • Serve with rasam / curd rice!!
