Equipment

  • 2L pressure cooker
  • Blender / mixer grinder

Ingredients

To grind

  • cup shallots
  • 1 inch ginger piece
  • 10 garlic cloves
  • 2 dried red chillies

To make pepper chicken

  • 300 g chicken pieces (bone in or boneless)
  • 1 inch cinnamon
  • 3 cloves
  • 1 star anise
  • 1 bay leaf
  • 1 green cardamom
  • ½ tsp fennel seeds
  • ½ tsp black cumin seeds (optional)
  • 1 tsp pepper powder
  • 2 tbsp oil
  • Salt to taste

Instructions

  • Wash and cut chicken into bite sized pieces. I have mixed it with turmeric powder.
  • Blend shallots, ginger, garlic and red chillies into a coarse paste.
  • In a pressure cooker heat oil and add cinnamon, cloves, cardamom, star anise, bay leaf, fennel seeds and black cumin seeds.
  • Once they sizzle, add the ground paste and saute for 2 to 3 minutes.
  • Add the chicken pieces and mix well.
  • Add salt and pepper powder.
  • Add ⅓ cup water, close the pressure cooker and cook on medium flame for 3 whistles. Let the pressure release naturally.
  • Open it and check for the doneness of the chicken and consistency of the gravy. If you need a semi gravy you can leave it as such. If you need a dry curry simmer for a few minutes.
  • Serve hot !!

Notes

  • Use freshly ground pepper powder to get a great flavour.
  • To make it a pepper chicken gravy you can increase the shallots to 1/2 cup and and add 1/4 cup more water.
  • You can increase the hotness of the dish by increasing or decreasing the pepper powder.
