Ginger chai | Ginger tea (with milk)

Ginger chai | Ginger tea is a delicious and refreshing cup of tea made with ginger, cardamom, milk and tea powder.

Equipment

  • 1 motor and pestle
  • 1 milk pan
  • 1 strainer

Ingredients
  

  • 1 ½ cup milk
  • 1 cup water
  • 1 inch ginger piece
  • 3 green cardamom pods
  • Sugar to taste

Instructions
 

  • Heat a pan, add water and bring it to a rolling boil.
  • Add coarsely ground ginger and cardamom pieces. Let it simmer for 2 minutes so that the flavour of ginger and cardamom gets infused in the water. You can use mortar and pestle to crush the ginger and cardamom. Alternatively you can also use a spice grinder.
  • Now add 3 teaspoons of tea powder, sugar ( if using ) and again simmer for 2 to 3 minutes.
  • Finally add milk, let it come to a boil and simmer for 3 to 4 minutes.
  • Strain and serve hot.

Notes

  • The cup mentioned here does not refer to standard measuring cups.Take a cup / glass in which you are going to drink your tea and measure in the same.
  • Since this is a milk based tea please do not add lemon, honey or maple syrup since they drastically alter the flavour and taste of the tea.
  • You can substitute white sugar with brown sugar or unrefined cane sugar.
  • If you are using dust tea, 2 teaspoons of tea powder is enough. On the other hand, if you are using ctc leaf tea you will be needing 3 teaspoons of tea.
  • Never add everything together and boil. You will not feel the layers of flavour in your cup of tea. And sometimes while adding ginger and milk together, the milk might curdle. So add all the ingredients in the given order.
